This truly is a healthy snack that could easily be mistaken for an indulgent dessert. I should almost dare you not to make this simple parfait. And with only four ingredients, how could you not?
First I have to say that I love eating Greek yogurt. With minimal additives, its full of protein and has a very simple flavor base which makes it perfect for snacking and creative pairing. Usually I go for the 0% fat kind, but when I'm looking to splurge a little I go for the 2%. The additional fat content is minimal and to me it tastes a lot less tangy than 0%. However, I hate the sweetened fruit compote and/or honey that is often paired with the yogurt. Simply put, its way too sugary for my palate.
So I've turned my taste towards using 100% pure Grade A maple syrup instead. It gives just the right touch of sweetness that I often crave with my greek yogurt without overdoing it. And in this recipe, its oaky flavor notes bring out the fruit's ripe flavor when drizzled over fresh summer peaches.
Take advantage of the fruits of the season, and enjoy this parfait bowl as a mid-morning snack or in place of that brownie sundae!
Maple Peach Parfait Bowl
1 ripe peach, sliced into bite sized pieces (peeled if you like)
2 tablespoons 100% pure Grade A maple syrup, halved
1/3 cup plain Greek yogurt (I prefer to use Fage Total 0% or 2%)
1/4 cup of your favorite nutty granola (my favorite is Bear Naked Fruit & Nutty Goodie Bag)
- Arrange sliced peaches at the bottom of a bowl. Drizzle one tablespoon of the maple syrup on top of the peaches and stir to coat.
- Top the peaches and maple syrup mixture with the Greek yogurt. Pour the remaining tablespoon of maple syrup over the yogurt.
- Sprinkle the granola on top, and dig in!
